The Post Brewing Co. opened in Lafayette, Colorado in 2014. It has since expanded, opening The Post Chicken & Beer in Longmont as well as in Denver’s Rosedale neighborhood. I really enjoy The Post in Lafayette, but as a Denver resident I’m happy to have an even closer location.

I recently visited The Post Chicken & Beer Rosedale for the first time. As the name implies, chicken (and the beer, of course) is the restaurant’s main attraction. While my vegetarian diet precludes me from trying the chicken, I’ve heard nothing but rave reviews about it. But still, why would a person who doesn’t eat meat pick such a place for brunch? Even though chicken isn’t an option for me, I knew there would be plenty of other delicious ways to enjoy my favorite meal of the week.

There are a few different ways a vegetarian can do brunch at The Post Chicken & Beer Rosedale. Here are my suggestions:

  1. The healthy pick: Go with the Hippyster Bowl (crispy brussels, red potato, sweet potato, kale, scrambled eggs, whipped goat cheese), or try the Kale Salad (granny smith apples, roasted sunflower seeds, dried cherries, pickled cauliflower, red grapes, shredded carrot, apple cider vinaigrette). Both are substantial and filling, but they’re also choices you can feel good about.
  2. The savory: Huevos Rancheros. It’s hard to go wrong with a huge plate of tortillas, eggs, cheese, and green chile! (note: the beans are cooked with pork, so ask to substitute potatoes instead).
  3. The “little bit of everything”:  There are several meatless starters & sides on the menu, like Buttermilk Cheddar BiscuitsCinnamon Sugar Donut Holes, and Green Chile Mac & Cheese. I got three small plates during my visit and loved it because I got to try a variety flavors. The biscuits were perfect: light and flaky. The mac & cheese was creamy and a bit spicy. And the donut holes were my favorite; the maple whipped cream adds an amazing finishing touch to these already awesome little bites.

There are tons of options on the brunch menu for everyone. As for the chicken, the traditional fried version is always available, but the menu also boasts a variety of ways to get your chicken fix in the morning with some breakfast-style dishes. Check out the Chicken and Waffles, Chicken Fried Steak or the Chicken & Biscuit.

Beverages include the classic brunch drink, the Bloody Mary as well as a couple of other interesting cocktails: Country Bubbles (house-made punch limeade, bubbles) and the Man-Mosa (vodka, Post Top Rope, orange juice). I was curious about both of the latter, but I was I was in the mood for a good, strong beer.

If it looks like the same type of beer in all of the photos here, that’s because it is. I can’t get enough of the Rooster Cruiser Double IPA! It goes with everything, in my opinion. But for those who aren’t into IPAs or simply want something under 8% ABV, other suggestions are Achtertuin Seizoen Farmhouse Ale (2016 GABF Gold Medal) or the Townie Ale. And definitely feel free to ask the staff for beer suggestions with your meal; they are experienced in what pairs best with certain dishes, and they are always happy to help.

The Post Chicken & Beer Rosedale is open for dinner every day at 4 p.m., serves Friday lunch at 11 a.m., and brunch on Saturday and Sunday starting at 9 a.m.
