Today’s hoppy recipe calls for hop shoots. I am really enjoying finding out about all the different ways to use hops in food.
Hop Spread (appetizer)
Yields 1 1/2 Cups
4 oz. diced hop shoots
4 oz. water
1 oz. capers
4 oz. diced celery
4 oz. diced onion
3 oz. diced red bell pepper
1 oz. chopped sun-dried tomatoes
1 tbsp. minced thyme
1 tsp. cracked black pepper
Olive oil and lemon juice, to taste
In the microwave, steam the hop shoots in a small amount of water, in a microwaveable dish, on high for about 4 minutes; drain and let cool.
Blend together other ingredients, and stir in the hops. This can be served as a spread/dip with crackers, pita chips, toasted baguettes, etc.
